Once again Chef Gerard Lewis of the Riviera Country Club will be preparing a gourmet feast for us to celebrate the Holidays.
We will sip multiple vintage champagne [Krug Grand Cuvee] while enjoying passed hor d'oeuvres. Your first course will be Braised Cured Pork Belly, Seared Fennel Dusted Scallop, Fava Puree, Pomegranate Rum Glaze, Leek Fondue & Brown Butter Brussels Sprouts [2000 Domaine de Chevalier Blanc]. The second course will be Roasted Porcini and Chevre Stuffed Poussin, Quince Currant Mostarda, Thyme Pan Gravy, Celery Root Puree, & Haricots Verts [2003 Gerard Raphet Clos Vougeot]. Your third course will be Slow Roasted Akaushi Rib Eye, Bordeaux Jus Lie, White Cheddar, Kale and Onion Yorkshire Pudding, Creamed Beet Horseradish & Asparagus Choron [1999 Luciano Sandrone Barolo Le Vigne and 1998 Chateau Beau-Sejour Becot]. The fourth course will be Brandied Pear Tart, Butterscotch Fig Sauce & Cranberry Ginger Ice Cream [2003 Chateau Rieussec].
