We are pleased to let you know that we have two exciting Sakes added to the menu below and renowned Toronto sake sommelier Michael Tremblay will be joining our zoom to tell us all about them. An extract from his bio states, ”Michael is a Sake Samurai, Sake Judge, Sake Sommelier and a perpetual traveller. An International Kikisake-shi, Advanced Sake Professional, French Wine Scholar (Highest Honors) and holder of the WSET Level 3 Award in Wine and Sake, he is based in Toronto, Canada where he can be found continuously learning or teaching someone about sake.”

So please join us for an authentic sushi meal catered by one of Toronto’s finest Japanese restaurants for over 30 years, Nami Restaurant. You can explore the tasty offerings of this wonderful restaurant at http://www.namirestaurant.ca  There will be a sushi educational component for IWFS Toronto members as Nami has created a video to show us how to prepare sushi from fish and rice. This video re “the method of cutting and preparing the fish”,  will be both informative and instructive. 

Menu: 8-piece sushi box: Blue Fin Tuna – the three different qualities of the fish; salmon, shrimp, Hamachi, Edamami, Miso Soup, and a Vegetable dish – spinach.

Sake pairings: Dassai ‘45’ Junmai Daiginjo, Fukushima and Tenzan ‘Jizake’ Muroka Genshu.

The Nami sushi and Sake ever was a great success with 27 Members and guests in attendance. The explanation of sushi preparation was interesting and informative in the form of an explanatory video. There is a true art form in preparing sushi properly with fastidious attention detail and appearance. I never understood the different parts of Tuna that allows for completely different texture and flavours, all from the same fish.

The remainder of the evening was dedicated to Sake, how it is made, to the ingredients and respective quality of hose ingredients that differentiates premium Sake from the run of the mill Sake. Michael Tremblay, has the rare distinction of being a Sake Samurai. He ran us through the ritual of being inducted into this elite group. Michael is a marvellous resource right here in Toronto. The presentation complete with informative slides and discussion fulfilled the IWFS mandate of exploring new culinary paths.
