Chef Nick Palermo has honed his craft at venues ranging from Hotel De Ville in Crissier, Switzerland, to Washington’s own 2941 and Cityzen restaurants. The menu that he prepared for us included many new takes on old favorites.
We started with trio of Oysters (Fried, Grilled, and Raw). Then it was on to Rockfish, graced with ginger confit, Yuzu emulsion, spaghetti squash, and topped with sweet Maine lobster, and accompanied by a Corton Charlemagne. In keeping with our theme of game, we were then treated to a Rohan Duck, served rare but tender, with a lovely crisped skin, paired with a Chateauneuf du Pape. More game ensues, with a Wild Boar Rack accompanied by braised red cabbage, chestnut caramel, pearl onions, bacon, with a glogg reduction which paired wonderfully with the 1998 Barolo Cannubi, Michele Chiarlo from our cellar!
The evening was a memorable one and everyone enjoyed the meal, the wines and the friendship!
