A very special venue has been chosen for our upcoming dinner on Tuesday May 17. Lûmé is one of the great additions to Victoria’s restaurant scene in the last couple of years. It has been said that Chef Shaun Quade and his fabulous team are not just aiming high, but they are aiming for the top. A meal at Lûmé is a real adventure that pushes the boundaries and presents modern food that is wild, exciting and technique-driven.
Unrestricted by the rules of formality, Shaun Quade has never been restricted to tradition. He says: ‘I can’t really fit my style as a chef into a region or a discipline or a cuisine, it’s more a constant, restless evolution. Once I create something, I always feel the need to create something better’. This drive for perfection is not surprising given that Quade developed his cooking skills at the fabulous restaurant Quay in Sydney, and then at Royal Mail in Dunkeld, both 3 hat restaurants at the time he was there.
Lûmé describes itself as having one overarching goal: to satisfy the senses with beautiful, boundary-bending food. Artfully deceptive, Lûmé takes a thoughtful, intensely focused and considered approach to dining. It is a restaurant that doesn’t just serve food. Rather, its staff create an experience to be fully enjoyed by those who possess a curious mind and a love of genuine, beautiful produce.
Typically, Lûmé serves an ever evolving 16 course degustation menu. We have selected the best of these dishes to present to you, matched with some wonderful old and new world wines. It will be a great dinner – please join us.
