Hi to all of our IWFS Victoria Members,

 

As many of you are aware, we have been hatching a plan for a fabulous new cooking masterclass, a gourmet American BBQ, presented by our member Elliot Miao from Los Angeles.  Some of you enjoyed his cooking at our recent cook-up.  He is well qualified to put on this gorgeous masterclass.  It is happening next Sunday, April 22, over lunch, start time of 1pm.

 

There is a limit of only 10 places so please be quick to book if you are keen to attend.  The cost for Young Members (under 36) is $90, for Members is $95, and $105 for Guests.

 

Our previous Confit Duck, Gravlax, Normandy, Dim Sum, Indian, Pasta, Soufflé and Risotto classes were great fun.  Now we are going to present you with a Gourmet American BBQ Masterclass. 

 

This will be presented by our fabulous new member Elliot Miao from LA. He would like to show you how to prepare a traditional American BBQ, in particular, the Holy Trinity which is the term used for the traditional Texan BBQ – Brisket (smoked beef on the primo), Pork ribs  (smoked on the bone) and Sausages (smoked Beef and Pork), together with sides such as traditional coleslaw, kale crisps, cornbread flats (Jalapeno corn bread) and smoky vegetables/fruit.  I think it will be a really fascinating master class. 

 

Elliot is a bit of a star at cooking, as those of you who came to our recent cook-up will know.  He worked as a culinary demonstrator for the William Sonoma group for 6 years in LA. He provided specialty training on food preparation, planning meals and ran cooking demonstrating specialty dishes.  He also gave advice on the technical aspects of culinary products in the kitchen utilizing the large range of kitchen and professional cooking tools under the William Sonoma brand. He has worked in food event planning, food trucks, catering and also completed several courses in culinary skills, including a year at the Cordon Bleu and several chef courses at the Saint Monica Academy of Arts, so he is well qualified to run this masterclass.

 

Of course we will share lunch and complimentary wines with the dishes that have been prepared.  You will get to see how to prepare the ingredients for a serious, gourmet ‘Holy Trinity’ American BBQ, and enjoy a lovely lunch with matching wines.  Recipes will be provided.

Cost for Members is $95, Young Members $90, and for Guests is $105.
