Foraging is the ancient process of harvesting food from the wild, or as close as we can get to it. We were lucky to have had two local experts to tutor us in our exploration of this fascinating culinary adventure.

 

Chris Bax from ‘Taste the Wild’ tastethewild.co.uk is both chef and forager and is well known to viewers of BBC’s Countryfile. He and his wife Rose guided us on a walk in garden of Hillbark, Bardsey and the surrounding fields , to identify edible plants and discuss how to use them in the kitchen. Drawing on history and folklore, as well as more modern uses, Chris and Rose pointed out  so many plants that could be harvested that we were amazed at how much wild food there is all around us.

 

We all know Stephanie Moon from her Great British Menu and food festival appearances and for the great events she has helped us with. Steph shares with Chris a passion for using foraged ingredients and her Wild Cooks initiative thewildcook.com is a fantastic source of information, including recipes, as to how foraged ingredients are a ‘must have’ in all the best restaurants.
