About the Chef-

Chef Rafael has been working in kitchens all over the U.S., starting when he was only 14 as a dishwasher in New York City. Throughout his career, he’s worked in every kitchen position he could get his hands on before coming to Fleming’s Omaha and becoming Chef Partner. Chef Rafael has trained under classical French and Italian chefs and draws a lot of inspiration and passion for food, both from this training and from his Mexican heritage - his father was also a chef and introduced him to the culinary arts at a very young age. His flavors are bold, spicy, and rich, with saffron being one of his favorite ingredients. His Chef’s Table menu brings to life the rich, bold flavors and dynamic creativity that embody the many culinary experiences Chef Rafael has throughout his journey as a Chef.

Celebrate the holiday season with us at Flemings' Steakhouse!  

If you haven't been to Flemings' in Omaha lately, you are in for a treat.    It is so much more than a chain restaurant.   Chef Rafael Ponce is preparing a custom menu for our event which will surprise and delight.   Chef Rafael worked in kitchens all over the U.S., starting in his early teenage years in New York City.   He has trained under classical French and Italian chefs.   He was inspired by his father who was also a chef and introduced him to the culinary arts at a very young age.   He has a creative flair, with flavors that are bold, spicy, and rich and draw from his Mexican heritage.   This unique meal will include a dry aged ribeye with a 'choose your own salt' feature.  And have you ever had bourbon bacon ice cream?   We will pair each eclectic course with an old world vs. a new world wine and compare the two. 
This premier event is limited to 55 people.   If history is any indicator, the holiday event fills up quickly so please sign up as soon as possible to secure your seats!   Due to limited space, we are limiting guests to two per couple.  This will be Joe's last event as President of the IWFS-Council Bluffs branch.   We look forward to a fun event and a great turnout to give him a warm sendoff (read:  make fun of him as much as possible!)
