A Note from the Chef
As the holiday season approaches, I always get excited and intrigued with the anticipation of helping plan the International Wine and Food Society's Annual Holiday Party. Even more so than in the past few years, as two great chapters will be in attendance this year.
After pouring over the cellar inventories, I felt compelled to veer in a slightly different direction, than what I typically would. The inspiration for this year's event is "A Tasting of New & Old". What a great way to showcase classical and traditional European Continental Cuisine (old), such as consommé, souffles, and Filet Rossini, with fresh modern contemporary techniques, flavor pairings and combinations (new).
For the wine, this will be exciting to highlight the craftsmanship of tried-and-true Old-World winemaking, with the "New" world styles stemming from California, Oregon and elsewhere.
I, for one, have high expectations and excitement about this menu, more so than many of the great menus I have produced in the past. Not only for the concepts I am trying to outline, but knowing the graciousness of IWFS members and their sincere love of excellent wine and well-executed cuisine. My Staff and I, as always, look forward to preparing a memorable evening for all.
