Sake: Amanoto Hyoushou ‘Diamond Dust’ – Junmai Ginjo. The Diamond dust comes from the Asamai brewery in Akita, famous for the yin-yang labelled Ama no To sakes that are instantly recognisable on store shelves.  This dry Nigori is named for the fine ‘dust’ evident in the sake after the bottle has been shaken. Medium bodied with aromas and flavours of liquorice and sweet cream. This is perfect sake to pair with seafood dishes

Sake: Kamoshibito Kuheiji – Junmai Ginjou–Aichi. This sake tastes like white wine - such as an aged Riesling without the petrol fragrance. Now a few restaurants in Paris are using this Junmai Ginjo in their restaurants. It matches well with western dishes especially light flavoured seafood and meat dishes

Sake: Gekkeikan Horin – Junmai Dai Ginj. Gekkeikan’s top class sake. ‘Horin’ has been awarded a Grand Gold Medal in the Spirits & Liqueurs Division of the 2006 Monde Selection international food & beverage competition.
