The President of the Tanglin Branch of IWFS organised an extremely enriching excursion to CWT Fresh at Jurong. This company deals with storing live seafood in peak condition. Alistair Douglas, CEO of CWT Fresh, conducted members on an enjoyable and educational tour of the facilities. We learnt how seafood is imported and kept in holding tanks using recirculated sea-water to ensure the products are reserved in top condition. Members were shown how frozen tuna was stored and then sliced into sashimi cuts and how to handle fish when it is thawed. We thank Alistair for his instructive time showing us how modern technology works to give us the high-quality seafood that we all enjoy.
Members then proceeded to a dinner at the Miele Kitchen with Chef Jimmy Chok, where we enjoyed a delectable meal with produce from CWT Fresh. Chef Jimmy’s presentation went extremely well with our choice of Austrian and Spanish wines. We conducted a tasting with the Riesling and Grüner Veltliner wines. Both wines were enjoyable, with the Riesling edging out the Grüner Veltliner by a small margin.
